Fresh Spotted Babylon Sea Snails

Spotted babylon snails with their unmistakable leopard-print shells — warm caramel blotches on cream — piled on a rustic plate with cucumber and lemon. Each shell holds a plump, firm nugget of meat.

The meat has a satisfying chew and a sweet, faintly briny flavour that stands up beautifully to chilli and garlic. Prick the meat out with a pin, or simmer briefly and serve with a dipping sauce.
